Homemade Waffles

Whole Wheat Waffles
  • 1 3/4 cup whole wheat flour
  • 2 T sugar
  • 1 T baking powder
  • 2 eggs
  • 1 cup milk
  • 3/4 cup water
  • 1/4 cup apple sauce
  • 1/4 cup canola oil
Mix together dry ingredients.  In another bowl, lightly beat the other ingredients.  Add the egg mixture to dry bowl and stir until moistened.  Pour into lightly oiled waffle maker. *The first time I made these, I kept pouring in way too much batter and it was spilling out the sides and making a HUGE mess.  Less is more.

This recipe made 18 waffles.  After the waffles cooled, I put them in a Ziploc freezer bag with wax paper between them and froze them!

  2. I have to share this recipe with you... it is our family's FAVORITE pancake recipe, and it is super healthy. http://www.fatsecret.com/recipes/cinnamon-oatmeal-pancakes/Default.aspx

I make big batches of them and freeze them for later. Just a few suggestions... it says to use instant oatmeal packs, I use 3/4 cup whole oats instead, and put them in the blender. I also use 2 teaspoons of sugar, rather than splenda. We've used pineapple, applesauce, and yogurt for toppings, as well as regular ole' syrup. They are absolutely DELICIOUS!
